  • Green Peas- I prefer to grab a bag from the freezer section. Using frozen peas prevents the mushy texture that comes when you use canned peas.
  • Celery– This recipe needs a bit of sliced celery to give it the earthy flavor it needs.
  • Onion– I like to use a sweet yellow onion, but any onion will do.
  • Chicken Stock- This creates the liquid for this pot pie and will thicken up as it is simmered. Any chicken broth will do. I use a homemade stock to make it a tad healthier.

If you find your filling to be too runny for your liking, create a cornstarch slurry using 1 tablespoon cornstarch and 2 tablespoons water and add it to your pot pie filling on the stove.

  • 1 large pot or dutch oven

Ingredients

  • 3 cups cubed chicken
  • 1 cup sliced carrots
  • 1 cup frozen peas
  • ½ cup diced celery
  • cup diced onion
  • ¼ cup all purpose flour
  • 4 tablespoons butter
  • cup whole milk
  • 2 cups chicken broth
  • 1 teaspoon salt and pepper, to taste

Instructions

  • Preheat oven to 400°F.

  • Chop your veggies and add everything (minus the peas) to one large pot or large skillet and sauté them until they are fragrant and tender. Don’t overcook because they will also be simmered with the sauce.

  • Add the chicken broth, diced chicken, and peas to the veggies.
